Fresh Beef Whole Muscle Cuts

Sub-Primal cuts are available from major whole muscles of the carcass, including the Chuck, Rib, Loin and Round, as well as Thin Meats (Brisket, Flap, Skirt, Tri Tip). Fresh beef cuts are vacuum packaged and boxed in 30 or 60 pound cases. Whole muscle cuts are trimmed to an external fat thickness of 1/4", unless otherwise specified by the customer.

Portion Control Cuts

Cut steaks of all sizes are packaged and sold fresh or frozen. Steak cuts are packaged in high barrier clear thermal roll stock film that increases the quality and shelf life of the product and enhances the visual appearance for the consumer. All portion cut products are cut using a Norfo computerized laser. This allows for a tolerance of plus or minus 1/2 oz. ensuring consistency in depth and shape resulting in a more consistent presentation.

The Individually Quick Frozen (IQF) bag of patties are 3/1. This easy to identify Stand Up Pouch is 3 pounds and equipped with a resealable ziplock seam.

2/1, 3/1, 4/1, 5/1, 6/1, 8/1 (known as sliders, which are gaining popularity). Other specialty sizes of patties are available and packed in 10 pound cases. Patties are formed by using the NuTECtured process which weaves individual strands of beef together to form a tender and moist patty.

Bricks

1 pound bricks of ground beef that are case-ready packaged in high barrier clear thermal roll stock film that increases the quality and shelf life of the product and enhances the visual appearance for the consumer.

Pucks

Pucks
Available in 6 oz. or 8 oz. sizes and perfect for “smash burgers” on the grill or griddle.

Bulk

Bulk
Bulk packed ground beef in curtain coated boxes (no poly liner is used) and ideal for cooking or large-scale further processing.
